Our Wednesday Sunset Dinners, available throughout the Summer and Fall, start with a cocktail hour at 5 PM, followed by a straightforward yet delectable dinner service at 7 PM. Reservations are required, and we accommodate up to 40 guests per night.

Relax and spend the evening at Ruby 360 Lodge. Ten spacious guests rooms are available for nightly booking on a first come first serve basis. Wake up with 360 panoramic views of the Great Basin Valley to the north and west and the Ruby Mountains to the south and east. Guests joining for Wednesday dinners may book a room for $270, taxes & fees included.

Passed Appetizer:
Cucumber and Crab Canapé – English cucumber cups generously stuffed with creamy Boursin cheese and blue crab claw meat.
Salad Course (served with grilled bread):
Heirloom tomatoes, thinly sliced red onions, and fresh mozzarella served atop a bed of peppery arugula and dressed with a zesty red wine basil vinaigrette.
Entree:
Braised Beef Short Ribs à la Jacques Pépin – Savory tender beef short ribs slowly braised in a classic red wine Bordelaise sauce, with carrots, celery, and onion, fresh rosemary and thyme. Presented over creamy buttered mashed potatoes with glazed carrots and crisp asparagus.
Dessert (offered at $6/person):
Peaches and Cream Shortcake – sweet peaches layered over tender shortcake and finished with whipped cream.
