Nestled amidst breathtaking views and cozy fire pits, our midweek dinner service offers a simplified yet delicious menu, perfect for any occasion. Whether you’re celebrating a special milestone or looking for a relaxing evening out, Ruby 360 Lodge welcomes you warmly.
Our Wednesday Sunset Dinners, available throughout the Summer and Fall, start with a cocktail hour at 5 PM, followed by a straightforward yet delectable dinner service at 7 PM. Reservations are required, and we accommodate up to 40 guests per night.

Relax and spend the evening at Ruby 360 Lodge. Ten spacious guests rooms are available for nightly booking on a first come first serve basis. Wake up with 360 panoramic views of the Great Basin Valley to the north and west and the Ruby Mountains to the south and east. Guests joining for Wednesday dinners may book a room for $270, taxes & fees included.
Menu for Wednesday, October 21st:
Passed Appetizer:
Pulled Pork Crostini – Crispy baguette slices crowned with silky cream cheese, sweet roasted shallot jam and smoked pulled pork.
Salad Course:
Classic Garden Salad – Crisp iceberg lettuce tossed with carrots, cucumber, juicy Roma tomatoes, Parmesan cheese and 360’s luscious creamy herb dressing. Served with grilled bread.
Entree:
Slow Mesquite-Smoked Prime Rib – Our 21-day-aged prime rib is coated in a signature grill rub, slow-smoked over mesquite, and finished with a flavorful reverse sear. Served with rosemary-garlic mashed potatoes, rainbow chard, roasted root vegetables, and a generous pour of robust au jus.
Dessert (offered at $6/person):
Southern-Style Pecan Pie – Southern-style pecan pie paired with rich vanilla ice cream and a decadent drizzle of caramel sauce.
