Our Wednesday Sunset Dinners, available throughout the Summer and Fall, start with a cocktail hour at 5 PM, followed by a straightforward yet delectable dinner service at 7 PM. Reservations are required, and we accommodate up to 40 guests per night.

Relax and spend the evening at Ruby 360 Lodge. Ten spacious guests rooms are available for nightly booking on a first come first serve basis. Wake up with 360 panoramic views of the Great Basin Valley to the north and west and the Ruby Mountains to the south and east. Guests joining for Wednesday dinners may book a room for $270, taxes & fees included.
Menu for Wednesday, September 9th:
Passed Appetizer:
Flatbread Pizza Margherita – Neapolitan pizza with ripe red tomato, fresh mozzarella cheese, and garden basil atop a crispy, stone-baked flatbread.
Salad Course:
Italian Wedge Salad – Crispy iceberg lettuce with antipasto soppressata, prosciutto, Genoa salami, heirloom tomato, black olive, and Gorgonzola cheese, finished with balsamic vinaigrette and garlic toast.
Entree:
Pollo alla Parmigiana (Chicken Parmigiana)- A dry-brined chicken cutlet coated in an Italian herb mix, garlic, Parmesan cheese, and crispy breadcrumbs. Smothered in thick pomodoro sauce and baked with a blend of four cheeses. Served with garden squash, roasted tomato, and polenta.
Dessert (offered at $6/person):
Tiramisu – Traditional coffee-soaked ladyfinger cookies covered with fresh mascarpone cream and cocoa powder.
